My Favourite Gluten Free Pancakes!

With pancake day just around the corner, (28/2/2017), I thought that this would be the perfect opportunity for me to share my favourite Gluten Free Pancake recipe with you.
These measurement's make 6 large pancakes.
Ingredients:
  • 125g Gluten-Free Plain Flour
  • 1 Medium Egg
  • 250ml of Milk
  • Lard for frying

Method:
  1. Put the flour in a mixing bowl
  2. Crack the egg in the middle and pour in a quarter of the milk. You can either use an electric wisk or a hand wisk to thoroughly combine the mixture.
  3. When you have a paste, pore in another quarter of the milk and once lump free, add the remaining milk.
  4. Leave the mixture to rest for 20 minutes stir again before using.

  5. Heat a non-stick frying pan with a knob of lard.
  6. When the lard is fully melted, pour a ladle of mixture into the frying pan and swirl around to coat the bottom of the pan.
  7. Keep repeating step 6 till you have used all of the mixture up.
  8. Finally, you can top your pancakes with your favourite topping. My favourite toppings are lemon and sugar or syrup.
These are just 3 out of the six pancakes topped with my favourite topping of lemon and sugar.
